General Tao's Tofu

Ingredients
1 (12 ounce) box firm tofu, cut into 1" cubes
1/4 cup oil
3/4 cup cornstarch + 1 tablespoon cornstarch, divided
10 green onions, chopped
2 cloves garlic, minced
2/3 cup vegetable broth
1/4 cup sugar
2 tablespoons bragg's liquid aminos
1 tablespoon white vinegar
Steamed broccoli
Rice, prepared

Directions

  • Coat tofu with oil in a bowl. Then sprinkle cornstarch over the tofu. Shake to coat tofu evenly. 
  • Add a small amount of oil to a large pan, add tofu, and fry on medium high until tofu is golden brown. Then remove the tofu from the pan and set aside.
  • Heat another small amount of oil in the pan. Add the green onions and garlic and cook on medium for about 2 minutes. Then add vegetable broth, sugar, bragg's liquid aminos, and vinegar. Stir well. 
  • In a small bowl, combine 2 tablespoons of water with 1 tablespoon cornstarch. Mix well and then add to the pan. Mix all ingredients in the pan and then add tofu. Heat on medium until the sauce thickens. Serve over rice with broccoli.
